Add oil to a saute pan on medium-high heat and saute the onions until they soften.
Next, add the ground beef to the pan and break it up into smaller pieces. Sprinkle in the Italian seasoning, paprika, garlic powder, and salt. Saute for about 5 to 6 minutes until it is golden brown and fully cooked.
Finally, add the peas, carrots, and yellow squash. Continue to stir for another 3 to 4 minutes until the veggies are tender.
