Pre-heat the oven to 400F. Peel and slice the potato lengthwise into 1/4 inch thick slices (need at last 4 slices).
Place the sweet potato slices and bacon on a sheet pan. Season the sweet potato on both sides with the garlic powder, paprika, and salt. Coat the sweet potato with olive oil on both sides.
Bake the sweet potato and bacon in the oven for about 10-15 minutes until the sweet potato is tender and the bacon is crispy.
Remove the sheet pan from the oven and let the ingredients cool. Layer the bacon and sliced tomatoes in between two sweet potato slices. Serve with a side salad and choice of salad dressing.
Note: You can also use an Air Fryer to cook your sweet potato toast at 360F for 12 to 15 minutes, flipping it halfway through.
