Slice the brussels sprouts into thin slices. Cut the bell pepper in half and remove the inner seeds. In a bowl, marinate the vegetables with balsamic concentrate, garlic powder, salt, and olive oil.
Place the brussels sprouts and bell pepper in the Air Fryer and cook at 350F for 7 minutes. After the veggies cook, remove them from the Air Fryer basket.
Place the bread slices in the basket and top each slice with cheese. Toast the bread at 370F for 1 minute (or until the cheese melts)
Then, assemble the sandwich by adding avocado slices, and the bell pepper, and serve with a side of the roasted brussels sprouts.
