When the saute pan is heated, add 1 tbsp of olive oil. Add the sausage and cook through until golden brown, then remove from the pan
Add 1 tbsp of oil to coat the pan, then add the leeks and stir for 2-3 minutes
Add the diced peppers and celery. Season with 1 tsp of paprika, 1 tsp of garic powder, and 1 tsp of onion powder. Cook for another 2-3 minutes until they have wilted
At the end add the sausage back to the pan and mix well
