Cut the outer green leaves of the cauliflower and cut off the bottom of the cauliflower stem, but make sure to keep the core intact
Cut through the middle of the cauliflower head to keep the florets together and cut thick "steak" slices about 1 inch thick
Save two thick slices and set the other floret pieces aside for another dish (you can keep it in the fridge for a few days or freeze it for a few months)
Place the cauliflower slices on a sheet pan and drizzle it with olive oil making sure it is fully coated
Bake it in the oven for about 25 minutes.
Meanwhile, dice the sausage in small square pieces. Mix together the tomato sauce with the thyme and salt
After 25 minutes, remove the cauliflower from the oven and top it off with the tomato sauce, minced garlic, shredded mozzarella, ricotta cheese, and sausage
Place it back in the oven to bake for another 5 to 10 minutes until the sausage heats through and the cheese melts
