Instructions
Add oil to a saute pan on medium-high heat and saute the onions, bell peppers, and butternut squash until they soften (about 4 to 5 minutes).
Next, add the black beans and sprinkle them with the seasonings. Mix everything together for another 2 to 3 minutes.
Serve the veggies inside the flour tortillas and top it off with fresh arugula.
