Add oil to a soup pot on medium-high heat and saute the onions and garlic until they soften. Next, add the ground turkey and break it up into smaller pieces. Continue to stir until the turkey is golden brown (about 5 to 7 minutes).
Then, add the chicken broth, chopped collard greens, cubed potatoes, and seasonings. Stir it all together and bring the soup to a boil.
Once the soup reaches a boil, lower the heat to a low medium and simmer for 10-15 minutes until the potatoes are fork tender.
At the end, pour in the coconut milk and sprinkle with red pepper flakes.
