marinara sauce

fresh basil leaves

shredded parmesan cheese
Instructions
Slice the eggplant crosswise in 1/2 inch thickness. Toss it in olive oil until it is fully coated. Season with salt and pepper
Preheat the indoor grill pan on medium-high heat. Grill the eggplant until tender (about 3 to 4 minutes on each side).
Meanwhile, heat marinara sauce in a saute pan on medium heat and add the fresh basil leaves.
Top each eggplant slice with marinara sauce and sprinkle them with shredded parmesan cheese.
