Sausage Marinara and Squash Noodles

Servings: 2

Ingredients

  • 4 each pre-cooked sausage links (85g each)
  • 12 oz squash noodles
  • 24 oz marinara sauce
  • 1 each red bell pepper
  • 2 tbsp parmesan cheese
  • 2 leaves fresh basil
  • 2 tsp salt
  • 2 tsp pepper
  • 1 tbsp olive oil (optional)

Instructions

Pre-Cook (Mise En Place):

  • Gather your equipment: tongs, knife, cutting board, baking dish, oven, microwave/saute pan
  • Pre-heat oven to 425 F
  • Cut red bell peppers in 1/2 inch squares
  • Cut sausage links in 1/4 inch slices

Cooking Method:

  • Pour half of the marinara mixture at the bottom of the baking dish
  • Add the sausage and bell peppers
  • Pour the remainder of the marinara mixture on top and mix well
  • Bake in the oven for 15 minutes at 425F
  • While the sausage marinara is baking, cook the squash spirals by steaming them in the microwave for 5 to 7 minutes. (or heat a saute pan on medium to high heat, add 1 tbsp of olive oil, and saute the squash noodles for 5 to 7 minutes)
  • Once the sausage marinara is finished baking, pour it on top of the squash noodles
  • Sprinkle parmesan cheese on top and garnish with fresh basil leaves or your desired choice of herbs. Season with salt and pepper to your preference
