
Stuffed Sweet Potatoes with Sausage
Servings: 4
Ingredients
- 4 each beef sausage links
- 4 each sweet potatoes
- 24 oz pasta sauce
- olive oil
- salt and pepper
Instructions
Pre-Cook (Mise En Place)
- Gather equipment: sheet pan, saute pan, cutting board, knife
- Preheat oven to 425F
- Wash and rinse sweet potato, cover with foil and place in the oven to cook for 30 minutes
- Slice beef sausage
- Preheat saute pan on medium-high heat
Cooking Method:
- Add 1 tbsp of olive oil to the saute pan and add the sliced sausage into the pan and cook until golden brown
- Add the pasta sauce and simmer in the pan for 15 minutes
- When the sweet potatoes are finished baking, remove from the oven and let it cool
- Once cool, slice it in half and scoop out the sweet potato (save the middle for another side dish for another meal)
- Add the sausage mixture on top of the sweet potatoes and bake for another 10 minutes
- Season with salt and pepper to taste
- Feel free to top off with fresh herbs such as basil
