Tilapia with Mango Salsa

Servings: 2

Ingredients

  • 1 lb tilapia
  • 2 each mangos
  • 1/2 each red onion
  • 1 bunch cilantro
  • 1 cup cherry tomatoes
  • 1 each lime
  • 2 tbsp olive oil
  • paprika, onion powder, garlic powder
  • salt and pepper

Instructions

Pre-Cook (Mise En Place):

  • Gather your equipment: Saute pan, cutting board, knife
  • Dice the red onion, cherry tomatoes
  • Dice the mango
  • Rinse and chop the cilantro
  • Slice the lime
  • Season the tilapia with 1 tsp of paprika, 1 tsp onion powder, 1 tsp garlic powder, salt and pepper

Cooking Method:

  • In a saute pan add 2 tbsp of olive oil, add the tilapia and cook each side for 5 to 7 minutes until golden brown.
  • In a bowl, mix together the red onion, cherry tomatoes, mango, and cilantro
  • Remove the tilapia from the pan and top it off with the mango salsa
