
Tilapia with Mango Salsa

Ingredients
- 1 lb tilapia
- 2 each mangos
- 1/2 each red onion
- 1 bunch cilantro
- 1 cup cherry tomatoes
- 1 each lime
- 2 tbsp olive oil
- paprika, onion powder, garlic powder
- salt and pepper
Instructions
Pre-Cook (Mise En Place):
- Gather your equipment: Saute pan, cutting board, knife
- Dice the red onion, cherry tomatoes
- Dice the mango
- Rinse and chop the cilantro
- Slice the lime
- Season the tilapia with 1 tsp of paprika, 1 tsp onion powder, 1 tsp garlic powder, salt and pepper
Cooking Method:
- In a saute pan add 2 tbsp of olive oil, add the tilapia and cook each side for 5 to 7 minutes until golden brown.
- In a bowl, mix together the red onion, cherry tomatoes, mango, and cilantro
- Remove the tilapia from the pan and top it off with the mango salsa
