Grilled Beef and Roasted Veggies

Servings: 4


  • 1.25 lbs flank steak
  • 1 orange bell pepper
  • 1 red bell pepper
  • 2 zucchini squash
  • paprika, garlic powder, onion powder
  • salt and pepper


Pre-Cook (Mise En Place)

  • Gather your equipment: Indoor Griddle/Grill, Oven/Toaster, cutting board, knife, small sheet pan 
  • Preheat your oven to 400F
  • Preheat your Indoor Griddle/Grill on Medium High
  • Marinate the flank steak with 2 tbsp salt and pepper, 2 tbsp garlic powder, 2 tbsp paprika, 2 tbsp onion powder
  • Slice zucchini in 1/4 inch circles, slice the bell peppers in 1/2 inch cubes

Cooking Method:

  • Place the beef on the preheated indoor griddle/grill and sear the beef on each side for 2-3 minutes
  • Remove the beef from the indoor griddle/grill and place it on a sheet pan. Place it in the oven for 15 minutes until the beef cooks all the way through.
  • While the beef is cooking, place the veggies on a sheet pan and drizzle with olive oil, season with 1 tsp garlic powder, 1 tsp onion powder, 2 tsp salt and pepper
  • Add it to the oven and cook for 15 minutes
  • When the beef is finished, set it aside to cool for 5 minutes
  • Slice the beef cross wise
  • Remove the veggies from the oven and serve with the beef slices
