
Ground Beef with Chayote Squash

Ingredients
- 1.25 lbs ground beef (lean)
- 2 each chayote squash
- 1 cup cherry tomatoes
- 1/4 cup diced red onion
- 1 8oz can tomato sauce
- 1/2 cup chopped cilantro
- 1/4 cup Coco Aminos
- olive oil
- paprika, garlic powder, onion powder
- salt and pepper
Instructions
Pre-Cook (Mise En Place)
- Gather your equipment: Saute Pan, cutting board, knife
- Preheat your Saute Pan on Medium High Heat
- Dice the red onion and slice the cherry tomatoes. Chop the cilantro
- Slice the chayote squash in small 1/2 inch cubes
Cooking Method:
- Add 1 tbsp oil to the saute pan, add the ground beef and red onion and saute until golden brown (cook for 10 to 15 minutes until the meat cooks through)
- Add 1/4 cup coco aminos, 1 tbsp paprika, 1 tbsp garlic powder, 1 tbsp onion powder, and 2 tsp salt and pepper to your preferred taste
- Add the tomato sauce and stir the mixture
- Add the chayote squash and cook until they soften (5 to 7 minutes)
- Then add the cherry tomatoes and cilantro at the end as garnish
