Salmon with Cucumber & Bacon Slaw

Servings: 4


  • 1.25 lbs salmon
  • 5 slices turkey bacon
  • 2 each cucumbers
  • 2 each lemon
  • 1/2 cup mayonaise
  • 1/4 cup chives
  • 2 tbsp olive oil
  • paprika, onion powder, garlic powder
  • salt and pepper


Pre-Cook (Mise En Place):

  • Gather your equipment: Oven, cutting board, knife, small sheet pan 
  • Preheat your oven to 400F
  • Season salmon with 2 tsp paprika, 2 tsp garlic powder, 2 tsp onion powder, and 2 tsp salt and pepper
  • Place the bacon on a sheet pan
  • Dice the cucumbers and slice the lemon into wedges

Cooking Method:

  • Place the salmon and turkey bacon on a sheet pan. Drizzle it with olive oil and place it in the oven for 15 minutes until it cooks through
  • Remove both the salmon and turkey bacon from the oven
  • Let the turkey bacon cool for a few minutes and then chop into small pieces
  • In a bowl, add the diced cucumber, cooled bacon, 1/2 cup of mayo. Add 2 tsp salt and pepper and squeeze the lemon juice on top. Mix until the cucumber is fully coated with the mayo
  • Serve the cucumber mixture with the salmon and top it off with the diced chives
