
Salmon with Cucumber & Bacon Slaw

Ingredients
- 1.25 lbs salmon
- 5 slices turkey bacon
- 2 each cucumbers
- 2 each lemon
- 1/2 cup mayonaise
- 1/4 cup chives
- 2 tbsp olive oil
- paprika, onion powder, garlic powder
- salt and pepper
Instructions
Pre-Cook (Mise En Place):
- Gather your equipment: Oven, cutting board, knife, small sheet pan
- Preheat your oven to 400F
- Season salmon with 2 tsp paprika, 2 tsp garlic powder, 2 tsp onion powder, and 2 tsp salt and pepper
- Place the bacon on a sheet pan
- Dice the cucumbers and slice the lemon into wedges
Cooking Method:
- Place the salmon and turkey bacon on a sheet pan. Drizzle it with olive oil and place it in the oven for 15 minutes until it cooks through
- Remove both the salmon and turkey bacon from the oven
- Let the turkey bacon cool for a few minutes and then chop into small pieces
- In a bowl, add the diced cucumber, cooled bacon, 1/2 cup of mayo. Add 2 tsp salt and pepper and squeeze the lemon juice on top. Mix until the cucumber is fully coated with the mayo
- Serve the cucumber mixture with the salmon and top it off with the diced chives
