Pineapple Chicken

Servings: 4


  • 1.5 lbs boneless chicken
  • 5 slices turkey bacon
  • 1 cup fresh pineapple
  • 1/2 cup shredded mozarella
  • 1 each shallot
  • 1 jar sun dried tomato pesto
  • salt and pepper


Pre-Cook (Mise En Place):

  • Gather your equipment: indoor grill, oven, cutting board, knife
  • Marinate the boneless chicken with the sun dried tomato pesto
  • Preheat the oven to 400F
  • Preheat the indoor grill to medium to high heat
  • Place the turkey bacon on a sheet pan
  • Dice the fresh pineapple
  • Slice the shallot

Cooking Method:

  • Place the turkey bacon in the oven and cook for 10 minutes until it is crunchy
  • Cook the chicken on the indoor grill pan on each side for 3 to 5 minutes until golden brown
  • Remove from the grill pan and place on a sheet pan and finish cooking it in the oven for 15 minutes
  • Remove the turkey bacon from the oven and slice into small pieces
  • Remove the chicken from the oven, add the mozzarella cheese and turkey bacon on top and cook in the oven for 3 to 5 minutes until the cheese has melted
  • Remove the chicken from the oven and place it on a serving dish. Top it off with the fresh pineapple
