
Pineapple Chicken

Ingredients
- 1.5 lbs boneless chicken
- 5 slices turkey bacon
- 1 cup fresh pineapple
- 1/2 cup shredded mozarella
- 1 each shallot
- 1 jar sun dried tomato pesto
- salt and pepper
Instructions
Pre-Cook (Mise En Place):
- Gather your equipment: indoor grill, oven, cutting board, knife
- Marinate the boneless chicken with the sun dried tomato pesto
- Preheat the oven to 400F
- Preheat the indoor grill to medium to high heat
- Place the turkey bacon on a sheet pan
- Dice the fresh pineapple
- Slice the shallot
Cooking Method:
- Place the turkey bacon in the oven and cook for 10 minutes until it is crunchy
- Cook the chicken on the indoor grill pan on each side for 3 to 5 minutes until golden brown
- Remove from the grill pan and place on a sheet pan and finish cooking it in the oven for 15 minutes
- Remove the turkey bacon from the oven and slice into small pieces
- Remove the chicken from the oven, add the mozzarella cheese and turkey bacon on top and cook in the oven for 3 to 5 minutes until the cheese has melted
- Remove the chicken from the oven and place it on a serving dish. Top it off with the fresh pineapple
