
Beef Cauliflower Fried Rice with Fried Egg

Ingredients
- 10 ounces ground beef (lean)
- 2 each eggs
- 14 ounces cauliflower rice
- 1 cup shredded carrots
- 1/4 cup red onion
- 1/3 cup coco aminos
- 2 cloves garlic
- olive oil
- paprika, onion powder, garlic powder
- salt and pepper
Instructions
Pre-Cook (Mise En Place)
- Gather your equipment: Saute Pan, cutting board, knife
- Preheat your Saute Pan on Medium High
- Dice the red onion
- Peel and mince the garlic
Cooking Method:
- Add 2 tbsp of olive oil to the saute pan, add the red onion and saute until softened and translucent. Then add the garlic and ground beef. Constantly stir the ground beef and cook until browned
- Then add the cauliflower. Season with 1 tsp of paprika, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp salt and pepper and saute the mixture for 3 to 5 minutes
- Add the shredded carrots, and red cabbage and stir well for another 3 to 5 minutes
- Then add the coco aminos and mix well
- Remove from the pan and set aside in a serving dish
- Heat another pan on medium high heat and add 1 tbsp of olive oil. Crack the eggs and cook for 3 to 5 minutes until the egg whites have fully cooked through
- Place the eggs on top of the cauliflower rice
