Shrimp with Corn Medley

Servings: 2


  • 10 ounces shrimp
  • 2 cups corn
  • 1 each red bell pepper
  • 1/2 cup diced red onion
  • 1/4 cup diced green onions
  • 1 each lemon
  • 2 tbsp olive oil
  • paprika, onion powder, garlic powder
  • salt and pepper


Pre-Cook (Mise En Place):

  • Gather your equipment: Saute pan, cutting board, knife
  • Dice the red onion, bell peppers, and green onions
  • Slice the lemon

Cooking Method:

  • In a saute pan add 1 tbsp of olive oil, add the diced onions, green onions, and red bell pepper
  • Add 1 tsp of paprika, 1 tsp of onion powder, 1 tsp of garlic powder to the pan
  • Saute the vegetable mixture until they have softened, then add the shrimp and cook until pink (about 5 to 7 minutes)
  • Remove the from the pan and squeeze the lemon juice on top
