Tilapia with Zucchini and Bell peppers

Servings: 4

Ingredients

  • 2 lbs tilapia
  • 2 each zucchini squash
  • 1 each red bell pepper
  • olive oil
  • paprika, onion powder, garlic powder
  • salt and pepper

Instructions

Pre-Cook (Mise En Place)

  • Gather your equipment: oven/toaster, sheet pan, cutting board, knife
  • Preheat your oven to 425F
  • Season tilapia with 2 tsp paprika, 2 tsp garlic powder, 2 tsp onion powder, and 2 tsp salt and pepper covering the whole surface area of the tilapia
  • Wash and rinse the bell peppers and zucchini squash
  • Slice the bell peppers into thin slices. Slice the squash into 1/4 inch circles. Season the veggies with 2 tsp paprika, 2 tsp garlic powder, 2 tsp onion powder, and 2 tsp salt and pepper

Cooking Method:

  • Place the tilapia and veggies on a sheet pan. Drizzle ingredients with olive oil and place it in the oven for 15 minutes until it cooks through
