One Pot Turkey Toscana Soup

- 1/2 cup red onions (diced)
- 1 garlic clove (sliced)
- 3 cups collard greens (rinsed and chopped)
- 2 small yukon potatoes (cut in 1/2 inch cubes)
- 3 cups chicken broth
- 1/2 cup coconut milk
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1 tablespoon olive oil
