Why this recipe is wholesome:

  • Eggs: Eggs are a staple ingredient in many breakfast recipes for good reason. They are not only affordable but also a nutritional powerhouse, packed with high-quality protein, vitamins, and minerals. In this recipe, eggs serve as the main protein source, providing a satisfying and filling component to the breakfast tacos. Additionally, eggs act as a binding agent, helping to hold the taco filling together while adding a rich and creamy texture to the dish.
  • Corn Tortillas: Corn tortillas are a traditional Mexican staple that are not only delicious but also budget-friendly. Made from corn masa, these gluten-free tortillas are a healthier alternative to flour tortillas and provide a hearty base for the breakfast tacos. Corn tortillas are low in fat and calories but rich in complex carbohydrates, making them a nutritious and filling option to help fuel your day.
  • Yellow Bell Peppers: Bell peppers are not only colorful and vibrant but also packed with vitamins and antioxidants. In this recipe, yellow bell peppers add a pop of color and sweetness to the breakfast tacos, while also providing a crunchy texture and a subtle flavor. Bell peppers are rich in vitamin C, vitamin A, and other beneficial nutrients, making them a nutritious addition to any meal. By sautéing diced yellow bell peppers, we enhance their natural sweetness and bring out their delicious flavor, adding depth and complexity to the dish.
  • Cilantro: Cilantro is a versatile herb that adds a burst of fresh and herbaceous flavor to the breakfast tacos. Not only does cilantro provide a pop of green color and visual appeal to the dish, but it also adds a refreshing and aromatic element that complements the other ingredients perfectly. Cilantro is rich in vitamins, minerals, and antioxidants, making it a healthy addition to any meal. By garnishing the breakfast tacos with chopped cilantro, we elevate the flavors and add a bright and vibrant finishing touch to the dish.

How to Meal Breakfast Tacos

  1. Begin by adding olive oil to a pan over medium-high heat. Once the oil is hot, add in the diced yellow bell peppers and sauté them for about two minutes until they start to soften. This initial step not only adds a pop of color to your tacos but also infuses them with a subtle sweetness.
  2. Now, it’s time to crack those eggs! Carefully crack each egg into the pan with the sautéed bell peppers. Use a spatula to gently scramble the eggs, ensuring they cook evenly with the peppers. Keep stirring until the eggs are firm and fully set. Don’t forget to season your egg mixture with a sprinkle of salt to enhance the flavors.
  3. While your eggs are cooking, warm up your corn tortillas. You can do this by placing them in a dry skillet over medium heat for about 30 seconds on each side. This quick step helps to soften the tortillas and make them more pliable for stuffing.
  4. Once your eggs are cooked to perfection, it’s time to assemble your breakfast tacos. Spoon the egg and bell pepper mixture evenly onto each warmed tortilla. Be generous – after all, you deserve a hearty breakfast to fuel your day!
  5. Last but certainly not least, it’s time to add a pop of freshness to your tacos with a sprinkle of chopped cilantro. This vibrant herb not only adds a burst of flavor but also provides a touch of green goodness to your breakfast.
  6. Now that your Cilantro and Bell Pepper Breakfast Egg Tacos are assembled, it’s time to prep them for the week ahead. Simply wrap each taco individually in foil or parchment paper to keep them fresh. Store them in an airtight container in the refrigerator, and you’ll have a grab-and-go breakfast option ready to fuel your busy mornings all week long!

Reference the recipe card below for detailed instructions.

Meal Prep Pairing Tips:

  • Fresh Fruit: Pair your breakfast tacos with a side of fresh fruit for a refreshing and nutritious addition to your meal. Sliced strawberries, berries, pineapple, or melon are all great options that complement the flavors of the tacos while adding a burst of sweetness and vitamins.
  • Avocado: Add a creamy and decadent touch to your breakfast tacos by serving them with sliced avocado or a dollop of guacamole. Avocado adds richness and healthy fats to the meal, while also providing a creamy contrast to the crunchy bell peppers and savory eggs.
  • Salsa or Pico de Gallo: Serve your breakfast tacos with a side of salsa or pico de gallo for a burst of flavor and spice. Whether you prefer a mild tomato salsa or a fiery salsa verde, the acidity and heat of the salsa will complement the flavors of the tacos and add a zesty kick to each bite.
  • Greek Yogurt: Swap out traditional sour cream for Greek yogurt to add creaminess and tanginess to your breakfast tacos without the extra calories. Greek yogurt is high in protein and probiotics, making it a healthy and nutritious alternative that pairs well with the savory flavors of the eggs and bell peppers.
  • Black Beans: Add a protein boost to your breakfast tacos by serving them with a side of seasoned black beans. Black beans are rich in fiber, protein, and essential nutrients, making them a nutritious and satisfying addition to any meal. Simply season the beans with a dash of cumin, garlic powder, and chili powder for added flavor.
  • Coffee or Fresh Juice: Wash down your breakfast tacos with a cup of hot coffee or a glass of freshly squeezed juice for a complete and satisfying breakfast experience. Whether you prefer a bold espresso or a refreshing orange juice, a beverage pairing can help balance the flavors of the meal and enhance your overall dining experience.

No Egg Breakfast Meal Prep

baked oatmeal - most popular meatless recipes

There is a whole new approach to the “most important meal” of the day. Eggs have always been synonymous with breakfast but no egg breakfast meal prep has been a fast growing trend for many reasons.

baked oatmeal - most popular meatless recipes

Meal prep can get stale. No egg breakfast meal prep inspires through limitations. You can still do classic breakfast meals but substitute eggs for another food or go in a completely different direction like overnight oats. You can also take meals that typically use eggs in the batter and use an eggless recipe. Try variations on pancakes and waffles with new recipes. It can be tough at first but as you learn new recipes it’ll be more fun and fresh. Keeping a meal prep routine is the hardest part of a routine.

One of the biggest and most obvious reasons for the rise in no egg breakfast recipes is veganism. The vegan diet cuts out a lot of foods, and eggs are one of them. People who are vegan have to get clever with their meal prep but these limitations also open up a new world of possibilities. Veganism is not for everyone but that doesn’t mean that everyone can’t learn from vegan recipes and nutrition. There is a lot of value, even for omnivores, in having meals that cut out animal and processed products.

Working no egg breakfast meals into your meal prep routine can improve nutrition by forcing you to focus on other ingredients and combinations that you may normally ignore. This varied diet is the best way to grow your gut health. Gut health is one of those components of health that we all always knew was important; we just didn’t have the recipes, methodologies, or science behind how to improve it. Now we have the start to all of those and are beginning to understand the true value of a varied diet.

  • Increased Fiber Intake: Fiber plays a crucial role in promoting regular bowel movements, preventing constipation, and supporting overall digestive health.
  • Diverse Microbiome: A varied and plant-rich diet can contribute to a more diverse gut microbiome. A diverse microbiome is associated with better overall health, as different types of bacteria perform various functions that support digestion and contribute to a balanced immune system.
  • Reduced Inflammation: Plant-based diets, particularly those rich in anti-inflammatory foods like fruits, vegetables, and nuts, may help reduce inflammation in the gut. Chronic inflammation is associated with various digestive disorders, and minimizing it can support gut health.
  • Prebiotics from Plant Foods: Many plant-based foods contain prebiotics, which are non-digestible fibers that nourish beneficial gut bacteria. Examples include garlic, onions, leeks, asparagus, and bananas. Consuming these foods can help maintain a healthy balance of gut microbiota.
  • Improved Digestive Enzymes: Some plant-based foods contain enzymes that can aid digestion. For instance, pineapple contains bromelain, which may assist in breaking down proteins, and papaya contains papain, known for its protein-digesting properties.

This also promotes more nutrient diversity which is great for overall health. Most of us don’t count macros or measure our vitamin intake. People are busy so at least trending in the direction of a nutrient diverse diet is a good first step.

rectangle glass meal prep containers with sliced potatoes rounds, ground beef, and diced bell peppers

For many people, meal prep is about required nutrition choices due to health conditions. Eggs can be part of a healthy diet but not necessarily for everyone. People trying to manage their cholesterol or develop an allergy to eggs need to find breakfast recipes that skip the eggs.

Anyone looking to lose a few pounds may prefer a more vegetable or fruit focused meal routine. We’ve been taught for years that breakfast needs to be calorie dense but that isn’t the case for everyone. A light, low calorie breakfast can be a great choice depending on what you have planned for the day or even based on your sleep routine. Eggs are delicious and can be healthy but they are also usually associated with high caloric breakfast combinations. No egg breakfast meal prep can be easier to get full on without unnecessary calories.

Lastly you may not love the flavor or texture of eggs and that is ok too. There are so many no egg breakfast meal prep recipes out there that are delicious, easy to make, and nutritious.

  • Minimal Ingredients: With just a handful of simple, affordable ingredients like eggs, potatoes, and bell peppers, this recipe won’t put a dent in your wallet. You likely already have most of these items in your kitchen, making it a cost-effective choice.
  • Versatility: This recipe is incredibly versatile, meaning you can easily customize it based on what you have on hand or what’s on sale at the grocery store. Swap out the bell peppers for any other veggies you love, or add in some extra protein like diced ham or crumbled sausage for a hearty twist.
  • Prep Ahead Potential: One of the biggest perks of this recipe is its meal prep potential. You can easily slice up your potatoes and dice your bell peppers ahead of time, then store them in the fridge until you’re ready to cook. This means you can have a delicious breakfast ready to go in minutes, even on the busiest of mornings.

Simple Ingredients You’ll Need

  • Eggs: Eggs are a staple ingredient in many breakfast dishes for good reason. They’re not only affordable but also packed with high-quality protein, vitamins, and minerals. In this recipe, eggs serve as the star of the show, adding richness and creaminess to the dish while also providing essential nutrients to keep you feeling satisfied and energized throughout the morning.
  • Potatoes: Potatoes are a budget-friendly pantry staple that adds heartiness and substance to any meal. They’re rich in vitamins, minerals, and fiber, making them a nutritious choice for breakfast. Slicing and pan-frying the potatoes in this recipe gives them a crispy exterior and a fluffy interior, creating the perfect base for the eggs and bell peppers.
Feel free to swap the red baby potatoes for any other variety of potatoes you have on hand, such as Yukon Gold or russet potatoes.
  • Bell Peppers: Bell peppers are not only vibrant and colorful but also incredibly nutritious. They’re loaded with vitamin C, antioxidants, and fiber, making them a fantastic addition to any meal. Dicing them up and sautéing them alongside the potatoes adds a sweet and tangy flavor that complements the richness of the eggs perfectly. Don’t have bell peppers? No problem! You can easily swap them out for any other veggies you have in your fridge, such as onions, mushrooms, spinach, or zucchini.
  • Salt: While salt may seem like a small ingredient, it plays a crucial role in enhancing the flavors of the dish. Just a pinch of salt helps to balance out the sweetness of the bell peppers and brings out the natural flavors of the other ingredients. You can experiment with different seasonings and spices to add flavor to your dish, such as garlic powder, paprika, chili flakes, or dried herbs like thyme or rosemary.
  • Olive Oil: Olive oil serves as the cooking fat in this recipe, adding richness and depth of flavor to the dish. It also helps to prevent sticking and ensures that the potatoes and bell peppers get nice and crispy during the pan-frying process.
Feel free to use any other cooking oil you have on hand, such as vegetable oil, coconut oil, or avocado oil.

How to Meal Prep Pan-Fried Potatoes and Eggs

  1. Start by slicing your potatoes into 1/4 inch thick slices and dicing up those vibrant red bell peppers into small, irresistible pieces. This prep step will ensure everything cooks evenly and tastes downright amazing.
  2. Heat up a sauté pan over medium-high heat and add a teaspoon of olive oil to get things going. Once that pan is nice and hot, it’s time to add in those potato slices. Let them sizzle away for about 2 to 3 minutes on each side until they’re golden brown and tender. Trust me, your kitchen will be filled with the most mouthwatering aroma!
  3. Once your potatoes are perfection, set them aside and toss those diced bell peppers into the pan. Let them dance around for a few minutes until they start to soften up and release their delicious flavors.
  4. Now it’s time to crack those eggs right into the pan. Lower the heat to medium and let those beauties cook for about 2 minutes until the whites start to set. Then, with a flick of the wrist, give them a gentle flip. Cook ’em up until the yolks are just how you like them – whether it’s sunny side up or perfectly over easy.
  5. Once your eggs are cooked to perfection, it’s time for the grand finale! Place those golden potato slices on a plate, top them off with your glorious eggs, and sprinkle on those sautéed bell peppers for an extra burst of color and flavor. A pinch of salt adds that final touch of perfection.

Simple Ingredients:

  • English Muffins: English muffins are the hearty, yet light base for our breakfast creation. They’re convenient, budget-friendly, and provide a satisfying texture that holds up well against the other ingredients. Compared to traditional bread slices, English muffins are lower in calories and carbohydrates, making them a healthier option for those watching their intake.
  • Bacon: Bacon adds that irresistible smoky, savory flavor that we all love. It brings a satisfying crunch and richness to the dish that perfectly complements the other ingredients. While bacon often gets a bad rap, it can be enjoyed in moderation as part of a balanced diet. Opting for leaner cuts and baking it in the oven helps reduce excess grease and calories, making it a healthier choice.
  • Cheese: Cheese adds creamy, gooey goodness to our English muffins, taking them to the next level of deliciousness. It provides a rich, indulgent flavor that pairs perfectly with the smokiness of the bacon. Opting for sliced cheese in this recipe keeps things convenient and budget-friendly. You can use your favorite variety, whether it’s cheddar, Swiss, mozzarella, or even a spicy pepper jack for an extra kick of flavor.

How to Meal Prep Bacon and Cheese English Muffins

  1. First things first, preheat your toaster oven to 350°F. We want it nice and toasty for our breakfast masterpiece!
  2. While the oven is warming up, it’s time to get our bacon crispy and delicious. Lay those bacon slices out on a sheet pan and pop them in the toaster oven. Let them bake for around 10-15 minutes, or until they’re golden brown and perfectly crispy. Ahh, can you smell that sizzle?
  3. Now, it’s time to prep our English muffins. Grab a knife and carefully slice them in half. Then, place those cheesy slices on the bottom halves of the English muffins. Pop them into the toaster oven for about 3 to 5 minutes, or until the cheese is ooey-gooey and irresistibly melty.
  4. Once the cheese is nice and melted, it’s time to add the star of the show – our crispy bacon slices! Layer those savory strips on top of the cheesy English muffins.
  5. Go ahead and add any extra toppings you love. Maybe a sprinkle of black pepper or a drizzle of hot sauce? Get creative and make it your own!

Simple Ingredients for Peanut Butter and Banana Muffin Bars

  • Bananas: Bananas serve as the primary fruit component in this recipe. They not only add natural sweetness but also contribute moisture and texture to the muffin bars. Bananas are rich in potassium, which supports heart health, and fiber, which aids digestion. Additionally, bananas are typically inexpensive year-round, making them a budget-friendly choice for adding flavor and nutrients to the recipe.
  • Peanut Butter: Peanut butter not only adds a rich, nutty flavor but also brings healthy fats and protein to the table. It helps to make the muffin bars more filling and satisfying, keeping hunger at bay throughout the morning. Peanut butter is also a budget-friendly pantry staple, offering a great bang for your buck in terms of nutritional value and versatility in various recipes.
  • Egg: The egg serves as a binding agent in this recipe, helping to hold the ingredients together and providing structure to the muffin bars. Eggs are an excellent source of high-quality protein, vitamins, and minerals, including vitamin B12 and selenium. They’re also relatively affordable, especially when purchased in larger quantities, making them a budget-friendly ingredient that adds nutritional value to the recipe.
  • Milk: Milk adds moisture and richness to the muffin bars while also contributing to their tender texture. It provides essential nutrients such as calcium, vitamin D, and protein, promoting bone health and overall wellness. Milk is often an affordable staple in most households, making it a budget-friendly ingredient that enhances both the flavor and nutritional profile of the recipe.
  • Honey: Honey serves as a natural sweetener in this recipe, providing a touch of sweetness without the need for refined sugars. It also adds moisture and helps to enhance the flavors of the other ingredients. Honey contains antioxidants and has antimicrobial properties, making it a healthier alternative to processed sugars. While honey may be slightly more expensive than granulated sugar, a little goes a long way, making it a cost-effective option for adding sweetness to the muffin bars.
  • Flour: Flour serves as the base ingredient in this recipe, providing structure and volume to the muffin bars. While all-purpose flour is used here, you can also opt for whole wheat flour for added fiber and nutrients. Flour is a pantry staple that is relatively inexpensive, making it a budget-friendly option for baking a variety of recipes.
  • Baking Powder: Baking powder acts as a leavening agent in this recipe, helping the muffin bars to rise and achieve a light and fluffy texture. It ensures that the bars have the perfect amount of lift and tenderness. Baking powder is a cost-effective ingredient commonly used in baking, making it a budget-friendly addition to this recipe.

How to Meal Prep Peanut Butter and Banana Muffin Bars:

  1. First things first, preheat your oven to 400°F (200°C). This ensures that it’s ready to go when your muffin bars are all set to bake.
  2. In a mixing bowl, crack open your egg and pour in the milk, honey, and peanut butter. Whisk these ingredients together until they are well combined and form a smooth mixture.
  3. Now, it’s time to add the flour and baking powder to the wet mixture. Stir everything together until you achieve a smooth batter. Make sure there are no lumps, as we want our muffin bars to be perfectly fluffy.
  4. Grease a baking dish to prevent sticking, then transfer your batter into it. Spread the batter evenly using a spatula to ensure uniform baking.
  5. lace the baking dish in the preheated oven and let your muffin bars bake for approximately 15 minutes, or until the center is fully cooked. You can test this by inserting a toothpick into the center—if it comes out clean, your bars are ready to go!
  6. Once your muffin bars are out of the oven and cooling down, it’s time to add the finishing touch. Slice some fresh bananas and place them on top of your bars for a delicious and nutritious topping.

Reference the recipe card below for detailed instructions.

Meal Prep and Pairing Tips:

  • Coffee or Tea: Start your morning right by enjoying a warm cup of coffee or tea alongside your muffin bar. The slight bitterness of coffee or the soothing qualities of tea can balance the sweetness of the muffin bars, creating a harmonious breakfast duo.
  • Greek Yogurt: Serve your muffin bar with a side of creamy Greek yogurt for added protein and texture. You can even drizzle some honey on top of the yogurt for extra sweetness.
  • Granola: Sprinkle some crunchy granola over your muffin bar to add texture and a hint of sweetness. It’s a great way to add a satisfying crunch to your breakfast.
  • Maple Syrup: Drizzle a touch of maple syrup over your muffin bar for an extra layer of sweetness. The rich, caramel-like flavor of maple syrup pairs beautifully with the nuttiness of peanut butter and the natural sweetness of bananas.
  • Hard-Boiled Eggs: For a balanced breakfast with added protein, serve your muffin bar with a side of hard-boiled eggs. It’s a filling combination that will keep you satisfied until your next meal.

It’s packed with vitamins A, C, and K, as well as iron, folate, and fiber. By sautéing the spinach before adding it to the omelette, we not only enhance its flavor but also make its nutrients more readily available for absorption by the body. Plus, using baby spinach keeps costs down without compromising on taste or nutrition.
  • Mozzarella Cheese: This ooey-gooey goodness not only adds a creamy texture and cheesy flavor to our omelette but also provides a source of calcium and protein. By using shredded mozzarella, we ensure that each bite is perfectly balanced with just the right amount of cheesy goodness. How to Meal Prep Spinach and Cheese Omelette:

  1. Heat up a tablespoon of olive oil in a pan over medium heat. Make sure that glorious green oil coats the bottom like a champ. 2. Grab a bowl and crack those eggs into it. Give them a good whisk until they’re all buddy-buddy. Now, pour this eggy goodness into your preheated pan. Tilt the pan like a pro to spread that eggy magic all around. Let it heat up and firm up, then use your spatula skills to coax the edges towards the middle.
  3. Once your eggs are starting to look all fancy and set, it’s time to add the stars of the show! Sprinkle that shredded mozzarella like confetti over the top, followed by your sautéed spinach. Gently fold your omelette in half, shaping it into a glorious moon of yumminess. Let it cook for a hot minute or so to melt that cheese into gooey perfection.

Meal Prep Eggs

Learning how to meal prep eggs will expand the volume of your meal prep recipes that’ll introduce flavors and textures you can’t get from other ingredients. Eggs have long been considered one of the best ingredients for their versatility, savory flavor, and nutritional value. You can add an egg compliment to tons of meal prep recipes with ease if you know how.

Another reason for eggs as a popular ingredient is for the affordability of the nutritional value. Eggs are relatively cheap and a great way to make meals more filling without spending a fortune on groceries. Between the affordability and versatility, meal prepping eggs is an important meal prep skill.

A good place to start with your meal prep eggs is the cooking method. There are a lot of ways to cook eggs and even more books for every method. We will focus on cooking methods that are best for meal prep. This will help with longer lasting eggs that retain texture and flavor in the fridge or freezer.

Meal Prep Egg Methods

We’ve already covered how to cook eggs in different styles so if you need help with the exact method and steps check our guide on how to cooking eggs.

Hard-Boiled Eggs: Hard-boiled eggs are great for meal prep as they can be batch cooked, store well, and pair well with a lot of recipes easily. You can boil as many eggs as you need, the exact method for boiling eggs depends on personal preference however you can reference our egg cooking guide above.

We recommend that you shell the eggs after they cool down. Doing them all at once is faster and you’ll thank yourself down the line. When you’re ready to add the hard-boiled eggs to a meal, slice them in half, into quarters, or even diced.

Scrambled Eggs with Vegetables: Scrambled eggs in general can act as an amazing base for a complete meal. Meal prep scrambled eggs can be cooked with many different vegetables. As long as you can cut the vegetables up into a small enough size and you take cooking time into consideration it should turn out delicious. Popular scrambled egg vegetables include bell peppers, onions, tomatoes, and spinach.

There are actually a lot of ways to scramble eggs. They pretty much all start with cracking eggs into a bowl and whisking though. (consider egg whites only or at least excluding some yolks to make it heart healthier) After whisking, the classic approach is stove top with a pan but you can cook them in the oven or even the microwave.

Try scrambling in large batches and portioning them out into individual meal prep egg dishes. You can add scrambled eggs as a side to many dishes.

Quiches, Frittatas, and Casseroles: All three of these are very similar but with minor differences along the cooking path. Quiches are a custardy egg mix poured into a pie crust. Quiche is velvety and has a tasty crust. Frittatas are closer to an egg scramble with a less velvety blend, which makes them a little easier and faster to cook. Frittatas are started on the stove top and finished in the oven. Egg casseroles involve the egg mix being poured over a mix of ingredients (cheese, sausage, veggies, etc.) in a casserole dish and cooked in the oven.

Quiches, frittatas, and egg casseroles are perfect options for meal prep egg recipes. They’re easier to cook in batches and portion out. Try our sweet potato egg frittata.

Egg and Rice Bowls: Scrambled or fried eggs mixed with cooked rice, veggies, and your favorite sauce. Fried rice is an incredibly popular dish around the world. It’s a quick dish to cook up and tastes amazing. Egg roll in a bowl is another popular meal prep egg dish. It’s delicious and can be very nutritious. These are really great options if you find yourself with leftover rice.

Egg Salad: Hard-boil a batch of eggs and make egg salad by mixing chopped eggs with mayonnaise, mustard, salt, and pepper. Use it as a sandwich filling, wrap filling, or as a topping for crackers or salads.

Egg Wraps or Burritos: If you have a batch of scrambled eggs and are looking for a different use for them consider breakfast tacos or burritos. Breakfast burritos are delicious and perfect meal prep egg recipes for busy people. You can easily batch make them, wrap them separately, and grab them on the go as you need. Add in cheese, salsa, beans, and other veggies to mix up the flavors and provide a more well rounded meal.

Fried egg: Frying an egg is a fantastic addition to tons of different meals. Add a fried egg on a hamburger for additional flavor and nutrition. You can also put a fried egg on top of pulled pork and chicken, rice, or even mixed greens. The trick, as it always is with eggs, will be getting the yolk to the right consistency for meal prep. Fried eggs may not be the best if you don’t plan on eating the meal for a few days. You can meal prep the rest of the dish though and then fry an egg the day of consumption. Frying eggs is pretty quick.

Batch meal prep eggs

There are literally dozens of ways to cook eggs but not all of them are a great choice for meal prepping. Methods like poaching will produce a delicious egg with an amazing texture but it won’t last long or travel well. Keep the poaching for an at home meal. Sheet pan: sheet pan cooking is an essential meal prepping skill. Being able to bake or roast multiple days worth of meals at once. It’s one of the easiest batch cooking methods and you can add eggs on top for an additional layer of flavor.

Muffin tin: cooking eggs in a muffin tin is perfect for recipes like egg cups. You can catch cook a dozen eggs at once and knock out a whole week of breakfasts in one go.

Casserole dish: egg casseroles is another quick and easy way to knock out an entire week’s worth of meals in one go. It’ll take a little longer than the muffin tin but the sheer volume of delicious and nutritious food you can make is worth the extra time.

How long will meal prep eggs last

Depending on the cooking method, eggs can last up to a week in the fridge and even two months in the freezer. It’s still a good idea to plan the use of your meal prep eggs before starting to avoid overfilling your fridge or wasting food. Most egg dishes can last up to 2 months in the freezer.

Scrambled eggs: can last for two to three days in the fridge.

Fried eggs: up to four days in the fridge.

Hard boiled eggs: up to seven days in the fridge. If you know you won’t be using the eggs within a few days though, you should leave the shells on. Peeling them early is efficient but the eggs can dry out in the fridge or start to take on the flavors of the other foods in the fridge quicker.
